2007 Napa Valley Cabernet Sauvignon

This Cab has a dense red color with deep plum edges. The rich cassis, coffee and sweet leather aromas fold into a supple matrix of blueberry, blackberry, and black currant. The finish features integrated tannins with good astringency and subtle vanilla notes. The lingering finish is a symphony of raspberry and caramel.

This wine is a natural choice with grilled rib eye steaks served with herb roasted carrots, parsnips, and green beans. As an alternative, pair it with an ahi tuna burger seared rare with a soy glaze. After dinner, it’s a slam dunk with chocolate desserts such as flourless chocolate cake with fresh berries.
